"I was looking for a rice recipe and could not find what I really wanted so I made this up. This rice was very good I could not stop eating it. It is a little on the spicy side but I loved it."

  1. I really liked this. Made it for Pick a Chef Spring 2008. The only substitution I had to make was to use a regular can of chopped tomatoes and added chilles to it. This came out too spicy to serve to my kids, but my husband and I loved it. And the leftovers we've got will reheat nicely, or could be used in burritos with leftover chicken.
