Lemon and Lime Tango Cocktail

- 1 cup white sugar
- 1 cup water
- 1⁄3 cup lemon juice
- 1⁄3 cup gin or 1/3 cup vodka
- 8 fresh mint leaves
- 1 lemon, rind of, finely grated
- 1 cup ice cube
directions
- Combine sugar and water in a small saucepan over a low heat. Cook, stirring, for 3 minutes or until sugar is dissolved and mixture comes to the boil. Reduce heat to low. Simmer for 5 minutes. Remove from heat. Set aside to cool. When cold, place in an airtight container. Refrigerate.
- Place 1/3 cup of chilled syrup, lemon juice, gin, mint, lemon rind and ice cubes in a blender. Blend until ice is crushed. Pour into 2 chilled glasses. Serve.

OMG this is FABULOUS!!!! I read the recipe and thought, vodka, YES. Then I thought, "Jenne, use the gin and see how it works." SO glad I did. This is super with the gin. I cut the recipe in half and it made enough for a martini glass. I added extra ice at the end, as it was a tad too sweet. SO fab. . .will definitely make this again!!! Thanks! I live in Keilor Downs, Victoria in Australia. I am a receptionist in Melbourne. My favorite cook books are anything Weight Watchers or Simply 2 good 2 be true also any muffin or scone cook books.
