  • Preheat oven to 350°.
  • Mix dry cake mix, 1 egg and oil until crumbly.
  • Reserve 1 cup and pat remaining mixture into a 9 x 13 inch pan.
  • Bake for 15 minutes.
  • Beat cream cheese, sugar, lemon juice and 1 egg until light and smooth.
  • Spread over baked layer and sprinkle with reserved crumb mixture.
  • Bake for 15 minutes more.
  • Cool completely and cut into bars.
  • Store in refrigerator.

  1. Couldn't find pudding added cake mix...used plain yellow...based on reviews, used an 8x8 dish rather than 9x13. Glad I did, the cheese mixture definitely not enough of a layer for larger size. Teaspoon of lemon..that was nothing if you wanted a lemony taste. I used the zest of one large lemon and almost all the juice of that lemon as well and the cheese had a nice lemony taste to counter the sweetness of the crust and crumbs. Based on pre baked taste alone, I'll give it 4 stars. Certainly easy to put together if you're in a hurry.
     
  2. Used a lemon cake mix, that was all I had! Added closer to 3 tsp of lemon juice. Wish I had doubled the cream cheese mixture so it would be thicker, but it was great.<br/>Thanks for sharing.
     
  3. Very easy, didn't measure the lemon juice and probably used a lot more than a teaspoon. I also used 1/3 less fat cream cheese just because that is what I had on hand and about a 1/3 cup sour cream because I had it in the fridge and it sounded good to add in. I'm not rating because of the changes. It was a very good bar, I think I would have liked a less sweet crust but I still think it tasted and looked great!
     
  4. I have to admit, this was pretty easy. I forgot about making a dessert for a function we were attending and this whipped up very quickly and looked really good. I was however disappointed in the lack of lemon flavor. I used more lemon juice than the recipe called for like some reviewers suggested, but I guess it wasn't enough more. Other than that. This was a hit! Thank you for the great 'in-a-pinch' recipe.
     
  5. These are great! I added 1/2 stick melted butter to the crust mixture and used a lemon cake mix. Also I increased the lemon juice to make them extra tart - everyone loved them - thanks!
