Lemon Chicken with Pasta

  • Heat 2 tbsp of the oil in large frypan.
  • Saute chicken strips over high heat until cooked.
  • Remove from pan; set aside.
  • Add 1 tbsp more oil to pan.
  • Saute broccoli until crisp-tender.
  • Remove from pan; set aside.
  • Add remaining 1 tbsp oil to pan.
  • Saute onion, garlic, rosemary and oregano until tender.
  • Blend in flour; gradually stir in milk.
  • Cook and stir over medium heat until mixture boils and thickens.
  • Stir in Parmesan cheese, lemon rind and juice.
  • Return chicken and broccoli to pan.
  • Add salt and pepper to taste.
  • Reheat to serving temperature.
  • Serve over hot cooked pasta and sprinkle with chopped tomato.

  1. Mediocre. The recipe calls for too much lemon juice for my taste...and the consistency of the sauce was odd. Had to pick the chicken out of the leftovers, rinse it, and make chicken salad because no one (including myself) liked this dish. Sorry!
     
  2. Hey...we loved it! The taste was yummy!!! Ken and I love lots of veggies and meat, so next time, we'll cut the spaghetti to 1/2 lb. Now that I think of it, I did add a bit more flour to thicken the sauce, but other than than... it's a keeper. Maryanne
     
  3. It was great. Easy to make. We used Farfalle unstead of spaghetti. We didn't have a tomato on hand so we didn't use. We'll have to try it with that next time we make it.

I love to cook and so I am thrilled that I found recipezaar. I work as an educational assistant in a food school so I am around food all day long. I have four children, three of which have already flown the coop so to speak but I still have my 'baby' at home. (He's 21).
