ingredients
- 2 1⁄2 cups flour
- 1 1⁄2 cups sugar
- 3⁄4 cup coconut
- 1 cup butter, softened
- 2 eggs
- 1 1⁄2 teaspoons cream of tartar
- 1 teaspoon baking soda
- 1⁄4 teaspoon salt
- 1 tablespoon lemon juice
- 1⁄2 teaspoon grated lemon rind
directions
- Combine all ingredients. Beat at low speed until well mixed, 2 to 4 minutes.
- Drop rounded teaspoonfuls of dough onto ungreased cookie sheets.
- Bake at 400 degrees for 7 to 10 minutes or until edges are lightly browned.

The yield was 66 cookies and I used a number 70 (1 Tbsp.) cookie scoop, the one sold by Pampered Chef. I flattened them with a glass dipped in sugar and they came out perfectly round. I used parchment on my cookie sheets, and I baked them 10 min. until edges were light brown. When they were cool I brushed them lightly with a lemon glaze (1 cup powdered sugar + 2 Tbsp. lemon juice) and topped with some yellow sprinkles.
