  • Combine all ingredients. Beat at low speed until well mixed, 2 to 4 minutes.
  • Drop rounded teaspoonfuls of dough onto ungreased cookie sheets.
  • Bake at 400 degrees for 7 to 10 minutes or until edges are lightly browned.

Tweaks

  1. The yield was 66 cookies and I used a number 70 (1 Tbsp.) cookie scoop, the one sold by Pampered Chef. I flattened them with a glass dipped in sugar and they came out perfectly round. I used parchment on my cookie sheets, and I baked them 10 min. until edges were light brown. When they were cool I brushed them lightly with a lemon glaze (1 cup powdered sugar + 2 Tbsp. lemon juice) and topped with some yellow sprinkles.

  2. The recipe, as written, didn't have enough lemon flavor for me, so I added an extra 1 1/2 tbsp of lemon juice and a tsp of lemon extract. Came out perfectly.
