  • Cream shortening and add sugars.
  • Add lemon juice, rind, eggs.
  • Mix dry ingredients and add.
  • Form dough into small balls.
  • Place on a greased cookie sheet and flatten.
  • Bake 350F for 10-12 mins.

  1. This recipe gave me 7 dozen cookies instead of 5! I didn't make the recipe exactly as specified, since I didn't have lemon rind on hand. I substituted it for orange rind. At first I thought these cookies were a little bland, like they needed some icing or something. But they improve with age. Best eaten after 1 or 2 days of storing. I will try this recipe again using orange juice, and maybe a lime version too. This recipe is worth keeping as a "to-tinker-with" recipe.
