- 1 3⁄4 cups shortening
- 1 cup white sugar
- 1 cup brown sugar
- 2 tablespoons lemon juice
- 2 eggs
- 2 teaspoons grated lemon rind
- 5 1⁄2 cups flour
- 1⁄2 teaspoon salt
- 1 teaspoon baking soda
directions
- Cream shortening and add sugars.
- Add lemon juice, rind, eggs.
- Mix dry ingredients and add.
- Form dough into small balls.
- Place on a greased cookie sheet and flatten.
- Bake 350F for 10-12 mins.

This recipe gave me 7 dozen cookies instead of 5! I didn't make the recipe exactly as specified, since I didn't have lemon rind on hand. I substituted it for orange rind. At first I thought these cookies were a little bland, like they needed some icing or something. But they improve with age. Best eaten after 1 or 2 days of storing. I will try this recipe again using orange juice, and maybe a lime version too. This recipe is worth keeping as a "to-tinker-with" recipe.
