  1. In a heavy bottom sauce pan whisk together egg yolk and sugar until well combined.
  2. Cut butter into small pieces and add along with lemon juice and salt.
  3. Stir constantly over medium low heat. Mixture will thicken. As soon as first bubbles appear, remove from heat.
  4. Strain mixture and add lemon zest.
