  • Preheat oven to 350 degrees.
  • In mixer bowl, combine all ingredients except confectioners' sugar; mix well.
  • Using hands, form dough into small balls.
  • Roll balls in confectioners' sugar.
  • Place on ungreased baking sheet, approximately 1 1/2 inches apart.
  • Bake at 350 degrees for 8 minutes or until lightly browned.

  1. These are 5 for easy! I think little balls are best - mine were a bit big and then they seemed a bit cake-y. I think too I will try w/ chocolate cake mix and perhaps some mint extract - yum. I will try these again for certain. I felt the lemon cake mix tasted too synthetic, I'd never had it before. I'm excited to figure out how I'd like these best, b/c they are simple and you could see if they were indeed little balls, they'd be morsels of goodness! Thanks for posting.
     
  2. These are wonderful cookies. Everyone loved them and I dont expect they will last past tonight. I used 2 spoons, one to scoop up the dough and one to rake it off and both to roll. Very easy and quick!

  4. These are killer! I made 2 batches, these lemon and chocolate. Very stiff batter, I used a small cookie scoop to drop them in the sugar. I'll be making these again asap!!

I work as a professional stagehand for my local union (IATSE Local 26, West Michigan Stagehands), which takes me all over the state and lets me meet all sorts of interesting people. My primary training is in lighting and wardrobe, and I can be found backstage at everything from rock concerts to opera/ballet/symphony/Broadway tour performances to hockey games to corporate meetings and Presidential appearances. In June of 2005, my Local elected me to serve as a delegate to our International convention in mid-July, which was held in Honolulu. In November of 2008, I was elected to my third three-year term as Recording Secretary of my union local. Currently, I am the news poster for www.megatechnews, a computer tech site affiliated with several other tech sites. My biggest passion is union activism. The more I get involved, the more I want to be involved. I also read like a fiend and enjoy "discovering" local or regional bands at local clubs. Recently, I started making jewelry again after a more than ten-year hiatus. It started as a project for Christmas presents, but doing it reminded me how much I enjoy it, so I may be resurrecting my business soon. I never duplicate a piece, because the entire point is that I do custom work, and will take orders to suit.
