Lemon Lovin' Asparagus

"Lemon and asparagus are a classic combination and there are many versions here on the site. In this version, the lemons are roasted along with the asparagus allowing them to caramelize releasing a wonderful tangy-sweet accent to the asparagus stalks. Even better, this heart healthy dish skips the butter and gently uses extra virgin olive oil and fresh herbs. The recipe easily doubles or triples for a larger group."

  • Preheat oven to 450°F
  • Toss asparagus, lemon slices, oil, oregano, salt and pepper on a large rimmed baking sheet. Roast, shaking the pan occasionally to toss, until the asparagus is tender-crisp, 13 to 15 minutes.
  • Serve hot or at room temperature.

  4. We loved them! I made a special Valentines dinner for my BF Mike and I, and this was the side dish that I made to help complete our meal. I picked these specifically because they had the addition of lemon which I thought would compliment the main course. We enjoyed them so much! They were simple and quick to the table which made preparing my special meal easy. We both give this five star winner our highest praise and we will now have them often since asparagus is one of our favorite veggies. Cassie

Tweaks

  1. We had these with our Easter dinner and they were delicious! I did use thyme instead of oregano. Just our personal preference. Might try rosemary next time and see how that works too!
