  1. Crush wafers, add butter and sugar. Press in bottom of 9" pie plate. Set aside.
  2. Beat egg yolks. Set aside.
  3. In saucepan, Mix 1 cup sugar, cornstarch and salt. Stir in water.
  4. Cook and stir over medium heat until thick and boiling. Remove from heat. Temper in egg yolks, return to heat and simmer 2 minutes.
  5. Remove from heat again and stir in lemon juice, lemon zest and butter. Pour into crust.
  6. Beat egg whites and cream tartar until frothy. Beat in sugar and vanilla until stiff peaks. Spoon on top of pie.
  7. Bake in 400 degree oven 10 minutes until lightly brown.
  8. Cool and chill.
