  • Place 4 1/2 cups water in a heavy pot with the barley and bring to a boil. Reduce the mixture by 50% over high heat. Strain the liquid into a clean glass container. Mix in the lemon or lime juice and honey, stirring well.
  • Serve well chilled.

  1. I drink barley water all the time, trying to lower my cholesterol and hoping to out run the diabetes bug! (it has caught several of my family & friends, but so far I'm doing good). I have tried all 3 recipes for barley water that are listed on "Zaar"...they are all pretty darn good and deserving 5 stars! I use Stevia to sweeten, if I sweeten at all. I have even flavored glasses with the flavored Stevia. I have also used barley water when making my Grand Children their powdered mix drinks (Crystal Light), they doesn't know the difference.
