Lemon Poppy Seed Cake

  • Mix egg white and milk.
  • Add lemon juice.
  • Add margarine.
  • Set aside.
  • Combine flour,baking powder,baking soda,salt,poppyseeds and lemon zest.
  • Mix with milk mixture.
  • Add vanilla.
  • Pour into greased 8 inch square pan.
  • Bake at 350F for 30 minutes.
  • While still warm sprinkle with powdered sugar.

  1. Perfect treat to go with a cup of coffee or tea. I used Splenda in place of the sugar and didn't use the powdered sugar due to be diabetic. I baked in a loaf pan and it turned out very light and fluffy with a subtle lemon flavor. 1/3 cup of poppy seeds I think is a litte too much. Next time I am going to try a scant 1/4 cup. Made for Honor thy Mother - and be Gluten-Free, too! Tag Game.
     
  2. Tasty, but didn't indicate where to add the 1/2 c sugar. My daughter was making it and almost missed it but added it at the end. Seemed a little heavy on the poppy seed, but perhaps because of the sugar, it didn't rise as much. Very nice simple recipe though
     
  3. Fantastic loaf !! Turned out great. I made a lemon glaze to top it off with.
     
  4. I was amazed that something with such a low fat content could taste SO DARN GOOD! Will definitely make this again. Instead of sprinkling the top with icing sugar, I mixed it with a wee bit of water, made a glaze and poured that over. It worked well. THanks
