Lemon Poppy Seed Scones

- 2 cups flour
- 3 teaspoons baking powder
- 1⁄4 teaspoon salt
- 1⁄4 cup sugar
- 1 tablespoon poppy seed
- 1⁄3 cup butter
- 2 tablespoons lemon juice
- 3⁄4 cup milk
- sugar
directions
- Preheat oven to 425°F.
- Grease cookie sheet.
- Mix flour, baking powder, salt, sugar and poppy seed in a large bowl.
- Cut in butter until mixture is fine crumbs.
- Mix lemon juice and milk, stir into flour mixture until dough forms a ball.
- Turn dough onto lightly floured surface, gently roll in flour to coat.
- Knead lightly 10 times.
- Roll or pat into a 9in circle. Sprinkle with sugar.
- Cut into 8 wedges.
- Place on cookie sheet.
- Bake 12-15 mins or until golden brown.
- Immediately remove from cookie sheet.

I have just made this recipe and it was a disaster! All of my measurements were accurate and I ended up with a soup-like consistency. I had to add several more cups of flour to get something like the dough that the recipe describes. The extra flour and stirring resulted in a tough and tasteless dough. I baked it anyway, just to follow through. The "scones" were so awful I threw the whole thing out! What a waste of my time and ingredients!

I have just ploughed my way through two pieces of this - it is beautiful! So simple to make and so tasty! When I was making it I was concerned there wouldn't be enough fat, but actually it was spot on and the texture was wonderful - perfect crumbliness! My only comment would be that the lemon flavour is VERY subtle. Next time I might try adding some lemon zest or a little more lemon juice to try and up the flavour, but even as it was it was SO good. I ate it warm with some sweet butter. Mmmmmmmm! Being a stereotypical Brit I found it a bit odd than the scones weren't round, but they'll still go great in a cream tea with butter, jam, clotted cream and a good old British cuppa! :o) A definite keeper - thanks Sam!
