  1. Beat egg whites until stiff but not dry.
  2. In separate bowl, sift sugar, flour and salt. Whisk in lemon rind, lemon juice, lemon juice, butter, milk and egg yolks.
  3. Fold beaten egg whites into lemon mixture. Pour into greased 1-quart baking dish.
  4. Place in pan of hot water to 1-inch depth. Bake in pre-heated oven at 350F for 35-40 minutes or until top is lightly browned.
  5. Serve warm or cold.
