directions

  • thoroughly rinse quinoa. bring chicken broth to a boil, then add quinoa. lower heat and simmer for 20 minutes. meanwhile, boil two eggs. sliver the onions and bell pepper and cut the cherry tomatoes in half. combine the juice of one lemon and the olive oil along with 1/4 tsp of cayenne pepper (more or less depending on taste). peel the eggs and discard the egg yolks; coarsely chop the whites. toss all ingredients together in a bowl. yields 3 1 cup servings.

  1. I reduced the servings to 2 cups and served it as a side to recipe #305328. The quinoa was allowed to cool some before adding in all the yummy vegetables. I might consider adding in some of the lemon zest for even more lemon flavor. Made for *PAC Spring 2010*
     
  2. I used red quinoa, diced my red onions and yellow bell peppers, quartered my grape tomatoes. used water in place of the broth for a veggie meal. Oh I used the whole egg just couldn`t throw the yolks away. I also added fresh minced garlic. Thanks for the good eats!
