Directions

  1. Add in rind to boiling water; reduce heat, and simmer for 5 minutes.
  2. In a small bowl, mix cornstarch, sugar and salt together.
  3. Add water gradually, whisking constantly.
  4. Return to saucepan and cook over medium heat for about 10 minutes until thickened.
  5. Lower heat and cook for 5-6 minutes longer.
  6. Remove from heat, and stir in lemon juice and butter.
  7. Best served warm.
