Lemon Tarragon Chicken Salad

"This is my favorite chicken salad. It is quick to prepare and although it contains mayonnaise it has a light, refreshing flavor. I am always asked for the recipe when I serve it. Enjoy!"

  • Bring a large pan of water to boil.
  • Add breasts, reduce heat to med/low, cover and simmer until chicken is just cooked through (about 12 minutes).
  • Cool.
  • Mix celery, mayonnaise, onion, tarragon (start with 1 T. and increase as taste dictates), lemon juice, and zest.
  • Cut chicken into 1/2 inch cubes and add to mayonnaise mixture.
  • Season with salt and pepper.

  3. lovely recipe, thank you! i used japanese mayo as that's what we have, and i used less than a quarter cup (making for 2), 30grams. i also added a bit of pumpkin seeds and pine nuts which went really well with the whole thing. served over salad leaves, it was dellicious!
     
  4. I've been making this since it first appeared in Bon Appetit in a spring issue about six years ago...? Adding walnuts (toasted) is really good, too.
     
  5. Lovely flavour, we enjoyed it served as a sandwich on a bun with a bowl of soup for supper. Love the tarragon,had to use dried, no fresh around yet. I used no fat mayo; not quite as much as was called for; not half a cup but not a quarter cup. The combination of tarragon,red onion, celery and the lemon zest made for lots of flavour and a little crunch. I used leftover roasted chicken drumsticks for the meat, worked out very well. Thanks for posting, I will be making it again.
