  • Sift together the dry ingredients.
  • Cream the butter and sugar. Add eggs, one at a time, and mix well after each addition.
  • Stir in the crumbled lemon thyme.
  • Form into a ball, place in a zip lock type plastic bag and refrigerate several hours or overnight.
  • Preheat oven to 350*.
  • Roll into 1" balls and place on a lightly greased cookie sheet.
  • Flatten slightly.
  • Bake in a 350* oven for 10 minutes. Watch closely.

  1. These were lovely cookies! I admit to also playing with the recipe and added lemon zest to the dough and a lemon juice/icing sugar glaze, as did the previous reviewer. These cookies go very well with tea and will definitely be made on a regular basis. A definite keeper!
     
  2. Delicious!!! I had a bunch of fresh lemon thyme so I used 2 Tbsp of that. I also added the zest of one lemon and a little lemon juice/confectioners sugar glaze as they were cooling. This one is a keeper. Would be great with tea.

I love cooking, and reading Christian fiction..I have 5 grandchildren..4 boys and 1 spoiled granddaughter...I also have a black cocker spaniel named Tobey..who is very spoiled..Love computer games, cross stitch and reading cookbooks..I was diagnosed with Acute Myeloid Leukemia almost a year ago, on September 26, 2005....was in an out of the hospital for 8 months, doing intensive chemo...I am doing well now, thanks for all the prayers...
