Lemon-Walnut Green Beans

"An easy side dish that is always a hit in my house. I've been told that this is a Southern dish, but my mother claims she used to make this back when she lived in Sweden. Eat and decide."

  • Sprinkle beans with salt, and arrange in a steamer basket over boiling water.
  • Cover and steam 8 to 12 minutes or until crisp-tender.
  • Plunge beans into cold water to stop the cooking process; drain.
  • Melt butter in a Dutch oven over medium-high heat; add green onions, and saute until tender.
  • Add green beans, walnuts, rosemary, and lemon juice; cook, stirring constantly, until thoroughly heated.
  • Sprinkle with lemon rind.
  • Serve immediately.

  1. These beans are delicious!! I cut the recipe in half, so we had them for two nights and they were just as good reheated in the microwave. The combination of flavours, rosemary, lemon and onion and the crunch of the walnuts is great! I will be making a whole recipe of these for my contribution to Christmas dinner, I know everyone will love them Mirj, thanks for sharing.

  3. I don't know why I did not care for this recipe. I love all the ingredients! Nobody ate them. I think the rosemary in combination with the strong lemon juice and zest flavors might have been overpowering. I had even already cut back on the rosemary! I will try them again without the zest and rosemary.
     
  4. Great make-ahead side. I did steps 1-4 before Holidays, and reheated with the rest of my dinner dishes in a warm oven. My shuband and I don't like veggies in general, but these were great; my mother even asked me for the recipe! Thanks!
     
  5. OHMYGOSH The best Green Beans I have ever had. I did go a little easy on the lemon zest, but used everything else as stated. I used fresh rosemary from the garden. I made the mistake of cutting the recipe in half thinking that 2 adults and one three year old wouldn't be eating so much. Both my husband and I went back for a large amount more and he LOVED it. I made them with another of Mirj's chicken recipes and when we were all done I said do you realize that were sitting here in Marietta, GA just having enjoyed an awesome dinner from a woman who is in Israel. How cool is that?
