Lemon Yogurt Cake

  • Grease loaf pan, cover base with baking paper.
  • Combine butter, rind, sugar, eggs, flour and yogurt in medium bowl of electric mixer. Beat on low speed until ingredients are combined.
  • Then beat on medium speed until mixture is smooth and changed in colour.
  • Stir in mixed peel. Spread mixture into prepared pan.
  • Bake in moderate oven about 1 hour.
  • stand few minutes before turning onto wire rack to cool.
  • Top cold cake 1/2 quantity Cream frosting and extra mixed peel, if desired.

Born in Singapore. Now living in Penang, Malaysia as my husband works here. Been here since Feb 2004. I have 3 boys aged 8,6 and 2. Have a friend here who loves to cook and bake cakes and got this "baking disease" from her.. :) Have been trying to bake quick bread and easy cakes and so far nothing good has come out of it.... I'm good at making no bake cheesecake though... :-P
