- 14 ounces sweetened condensed milk
- 1⁄2 cup fresh lemon juice
- 1 1⁄2 teaspoons freshly grated lemon zest
- 2⁄3 cup butter, at room temperature
- 1 cup packed light brown sugar
- 1 1⁄2 cups flour
- 1 teaspoon baking powder
- 1⁄2 teaspoon salt
- 1 cup quick oatmeal
directions
- Preheat oven to 350 degrees.
- In a small bowl, mix cond. milk, lemon juice and lemon zest. Set aside.
- In a large bowl, cream sugar and butter.
- Add flour, baking powder, salt and oatmeal. Mix until coarse crumbs form.
- Firmly press half of the crumb mixture onto the bottom of a buttered 8x12" baking dish.
- Pour condensed milk mixture on top.
- Cover with remaining crumb mix and press down gently.
- Bake for 25-30 minutes or until brown around edges.
- Chill before cutting.

Great tasting bars, these are, & they were made for my other half to take to work & share! I did make them in a 9:x13" baking dish, & because I knew they'd be quite sweet, I cut the batch into 24 bars, rather than the larger 12!
