  1. In a large pot combine quinoa, broth and lemon zest. Bring to a boil over medium heat. Reduce heat to low and simmer for 15 minutes.
  2. Stir in asparagus and peas; simmer, uncovered, for 3-5 minutes or until asparagus and quinoa are tender.
  3. Stir in chives and lemon juice. Season to taste with salt and pepper. Serve sprinkled with cheese.
