Directions

  1. In pot combine potatoes with enough cold water to cover by 1", over med.-high heat, bring to a boil. Reduce heat to med and simmer uncovered until potatoes are tender about 20-25 minutes.
  2. Drain and cool enough to handle.
  3. Meanwhile in small bowl, combine lemon juice, zest, salt and pepper until salt disolves.
  4. Slowly whisk in oil until mixture thickens slightly.
  5. Cut potatoes in half and place in serving bowl.
  6. Add scallions and dressing and toss to coat.
  7. Chill overnight for maximum flavor and bring to room temperature to serve. Great warm or cold.
