Lentil Breakfast Sausages

"Don't let the lentils scare you away. These may be meatless but they are delicious and filling, and go great with a fried egg or pancakes. To make them vegan, substitute vegan egg replacement for the egg."

  • Cook lentils in water for 40 minutes.
  • Remove from heat and allow to cool for 15 minutes. Don’t drain off any excess water.
  • Blend ¾ of lentil mixture using immersion blender, or mash with a fork or potato masher.
  • Mix with all other ingredients; press firmly into loaf pan or muffin tin that has been greased or lined with parchment paper. Be sure to fill all the corners.
  • Bake @ 350 for 45-50 minutes, 40 minutes for a muffin tin.
  • Let cool in pan before slicing.

I grew up watching my mom cook. Now, my mom is one of those people who can't actually follow a recipe - she always ALWAYS modifies things to her own tastes, and usually makes them better. Both my brother and I have developed a love of food through my mom. While I am just a chef-for-fun, my brother is actually studying to get his culinary arts degree! I'm proud to say I've taught him a thing or two about cooking along the way... and I'm even more proud that now he's turned around and started teaching me things.
