- 1 cup lentils
- 4 medium tomatoes
- 100 ml oil
- 1⁄2 cup flat leaf parsley
- 2 -3 garlic cloves
- 1 tablespoon cumin
- 1 tablespoon paprika
- 1 teaspoon salt
- 1 liter water
- 1 tablespoon cayenne
directions
- rinse and drain lentils.
- chop tomatos, garlic and parsley.
- heat oil in deep frying pan.
- add garlic and stir constantly to prevent browning.
- add spices.
- add tomatos.
- heat 2 mins.
- add lentils and parsley.
- add mixture into 1L water and bring to boil for 1 min.
- decrease temp and allow mixture to simmer until satistfied.
- make sure to cover pot with a lid.
