Lentil Stew

"My grandmother has been making this recipe since I was a kid. I have looked for a similar recipie for a long, but no one seems to make it this way. It is perfect for the winter or for just a healthy meal! I have also used left over marinara sauce instead of the tomatoes and it was even better. I hope you enjoy it as much as I do."

  • Put lentils in a large pot and put in enough water to cover lentils about 4 inches above the beans. Cook over med-high heat.
  • Add tomatoes and sauce, bell peppers, onions, garlic, vinegar, bouillon, and salt.
  • Bring to a boil.
  • Reduce heat and add ground beef in small batches and simmer until beef is cooked about 30 minutes.
  • I have also sauteed the onions, bell pepper, and garlic, but I prefer them to boil them with the lentils. Try it either way, it will still be amazing!

<p>I have been tattooing professionally for 10 years. <br />I had my first baby in March 2005. He's the best thing that ever happened to me! <br />Update: Since this post, I had twins in May 2007. Unfortunately one was born with a Congenital defect called Diaphragmatic Hernia. She has been in the hospital since she was born and as of today it has been almost 8 months. As soon as we come home, I plan to start getting back in the kitchen, but it has been the last thing on my mind as of late. <br />2nd Update: My daughter has been home for a year now and she's been doing really well. She's still has a long way to go, but she's strong as an ox!</p>
