Lentil Walnut Burgers

ingredients
- 3⁄4 cup toasted walnuts
- 1⁄3 cup dried breadcrumbs
- 3 cloves of chopped garlic
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1⁄4 - 1⁄2 teaspoon red pepper flakes
- sea salt and pepper
- 3⁄4 cup lentils, cooked,drained and cooled
- 4 tablespoons olive oil
- 1 large egg
directions
- Combine walnuts, breadcrumbs, garlic, cumin, corander, pepper flakes, 1 1/2 teaspoons salt, and 1/4 teaspoon pepper in a food processor.
- Process until finely ground.
- Add the lentils and 1 Tablespoon oil; pluse until coarsely chopped.
- Some of the lentils should remain whole.
- In a large bowl, whisk egg.
- Add lentil mixture and stir well.
- Divide the lentil mixture into 4 equal size parts, and roll into balls.
- Flatten them into 3/4 inch patties.
- Heat remaining 3 tablespoons oil in a large skillet.
- Add burgers and cook over medium low heat until crisp and browned, turning gently after 8 to 10 minutes.
- Cook another 8-10 minutes.
- Serve on buns as a sandwich, adding your favorite garnishes: tomatoes, pickles, lettuce, etc.
- Or, serve as a main dish with your favorite sauce.

This taste of these was good, reminded me of falafel actually. I was expecting more texture though! Maybe next time I would cook my lentils to a "not quite done" phase rather then soft. I'll give them credit for staying together PRETTY WELL, they were a little on the delicate side, but they didn't crumble. I got 6 patties from this. Used a vegan egg sub (1 heaping tbsp chickpea flour 2 tbsp water) That was my only change though.

I'm not rating this recipe as I have not tried this recipe. I found this recipe in Martha Stewart Everyday Food. I think this looks so good and I plan to try it soon. The copy of this recipe I have says to also serve this with Yogurt Cilantro Sauce - 3/4 c plain low fat yogurt, 2 tbl chopped fresh cilantro leaves, 1 tbl fresh lemon juice, coarse salt and freshly ground pepper. In a bowl, whisk together the yogurt, cilantro, and lemon juice; season with salt and pepper. Thanks for posting what looks like a yummy recipe! Christine (internetnut)

The taste of these is just great. Something about the proportions didn't work out, though, and we had more of a batter than a mixture that could be patted into burgers. We used red lentils, which cook to mush, and are thinking that might have been the issue. We cooked it like falafel -- by spooning the batter into hot oil -- and enjoyed it. Thanks for the recipe.

<p>Life often interupts our comfortable routines in very unexpected ways and in the past three years I've certainly faced some challenges. As a health nut who ate mostly vegetarian I was beyond shocked to discover that I was diabetic. <img title=Yell src=../tiny_mce/plugins/emotions/img/smiley-yell.gif border=0 alt=Yell /> I shouted and rebelled and cried. But the good news is that I can control my glucose levels simply by eating very low carb. What a complete turn around it was to pass up all my high carb vegetarian foods like grains, and veggies and embrace meat! <img title=Surprised src=../tiny_mce/plugins/emotions/img/smiley-surprised.gif border=0 alt=Surprised /> I've adjusted to this limited diet and thanks to Zaar can eat a nice variety of healthful meals.</p>
<p> The next challenge was a freakish fall I took while in New York with my daughter that left me paralyzed and in much pain. I thank God that I am so much better today after more than two years recovery, with total mobility and just some minor pain in my arms and hands. Cooking and communicating here was not really on my priority list. But, I am back in action and ready to cook, take photos, and enjoy this wonderful community of friends.<img title=Laughing src=../tiny_mce/plugins/emotions/img/smiley-laughing.gif border=0 alt=Laughing /></p>
