Leslie's Chunka Soba Noodles, Tomato and Basil With Feta

- 6 ounces soba noodles, cooked and drained (save 1 cup of the noodle water)
- 10 grape tomatoes, halved (about a cup )
- 1⁄2 cup basil, fresh thinly sliced (1 1/2 tsp dried basil leaves)
- 1 garlic clove, minced
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon ground black pepper
- 4 ounces feta cheese, crumbled
directions
- Mix tomatoes, basil, garlic, salt and pepper with the cooked Soba Noodles. Place in a large skillet, add half of the reserved noodle water and heat through.
- Add the Feta Cheese to the noodle mixture and add more of the noodle water, stir until the cheese melts into the pasta and makes a creamy sauce. It really does, believe me !
- If you want you can serve topped with a few toasted Pine Nuts, some more fresh basil and some Parmesan cheese. Presentation is Everything !
