Directions

  1. 1. Put the avocado and spring onions in a bowl. Season well and mix everything together.
  2. 2. Heat the oil in a pan over a low heat then stir in the courgette and chilli. Cook for 1 minute, then stir in the shrimps, lime zest and juice, Tabasco and 2 tbsp water. Heat through for a minute, then spoon into the bowl with the chopped vegetables. Season well.
  3. 3. Cut the Iceberg lettuce in half then arrange some of the cups of lettuce on each plate, dividing them equally.
  4. 4. Spoon over the warm shrimp mixture, then scatter with the chives and serve with the lime wedges.
