  1. Preheat oven to 425. Coat large baking sheets with cooking spray.
  2. Cut chicken into 1 inch pieces.
  3. Combine flour, chili powder and salt in a plastic bag. Add chicken, a few pieces at a time, shaking to coat.
  4. Combine egg and milk in a shallow dish.
  5. Place bread crumbs in another dish.
  6. Using tongs, dip chicken into egg mixture, then bread crumbs, turning to coat.
  7. Place nuggets in a single layer on baking sheets, ensuring at least 1 inch of space between them.
  8. Bake 6 minutes. Turn nuggets over. Bake 6 more minutes. Nuggets are done when their internal temperature reaches 165 degrees F.
