Light Chocolate Chip Oatmeal Pancakes for Two

"I have experimented many times and have been improving - this recipe gives instructions from my experiences for the best results that I've had so far. Oatmeal pancakes form scratch for two servings, or a hearty single serving. Uses egg whites and nonfat milk and no added sugar."

  • Pour water and milk over oats, let sit for 10 minutes, or until oats has noticeably soaked some of the liquid.
  • Add baking soda, splenda and flour.
  • Mix in egg white and white vinegar to combine well.
  • Stir in chocolate chips.
  • Spray skillet and set over high heat.
  • Wait until well heated, about 5 minutes.
  • Add batter, 1 tbsp at a time, and tilt the pan so that it spreads and the size becomes bigger.
  • Wait until bubbles set, about 1 minute, before flipping.
  • Repeat for the remaining batter until finished.
  • Serve hot!

  1. I wish I'd like them more. They were hard to spread in the pan. I had to add more batter in the pan and then push it with a spoon. I got 3 pancakes. Thanks Just Happy :) Made for PAC Fall 2011
