- 1 medium tomatoes (cored, seeded, and chopped)
- 1 cup frozen lima beans
- 1 Hass avocado (pitted)
- 3 tablespoons fresh lime juice
- 2 tablespoons reduced-fat mayonnaise
- 1⁄2 teaspoon salt
- 1⁄4 cup cilantro (minced)
- 1 medium jalapeno (stemmed, seeded, and minced)
- 1 tablespoon shallot (minced)
- 1 garlic clove (minced)
- 1⁄2 teaspoon cumin
- 1 pinch black pepper
directions
- Cook frozen lima beans, then rinse under cool water and dry (remove skins unless baby lima beans and you'd like to be creamier).
- Process 1/4 an avocado, lima beans, lime juice, mayo, and 1/2 tsp salt in food processor.
- Cube the rest of the avocado and stir together with the rest of the ingredients. Add salt and pepper to taste.
- Let sit, tightly wrapped, in fridge for flavors to combine.
