  • Saute onions and peppers in olive oil over medium heat until they just begin to soften. Add garlic and seasoning and saute for 1-2 minutes more.
  • Add the peppers and onions to the pot along with the zucchini, broth, tomatoes, pizza sauce, red pepper (if desired) and pepperoni.
  • If cooking on the stovetop, cook on medium/low for at least 20 minutes. If using the crock pot cook on low for 3-4 hours.
  • season with salt and pepper. Serve topped with 2 tbs mozzarella.
