- 1 onion, chopped
- 1 green pepper, chopped
- 2 garlic cloves, chopped
- 1 teaspoon olive oil
- 1 zucchini, chopped (optional)
- 1 (14 1/2 ounce) can low sodium beef broth
- 1 (14 1/2 ounce) can diced Italian tomatoes
- 3 ounces turkey pepperoni, chopped
- 1 teaspoon pizza seasoning
- 1⁄2 cup low fat part-skim mozzarella cheese
- 1 (14 1/2 ounce) jar pizza sauce
- 1⁄2 teaspoon crushed red pepper flakes (optional)
- salt and pepper
directions
- Saute onions and peppers in olive oil over medium heat until they just begin to soften. Add garlic and seasoning and saute for 1-2 minutes more.
- Add the peppers and onions to the pot along with the zucchini, broth, tomatoes, pizza sauce, red pepper (if desired) and pepperoni.
- If cooking on the stovetop, cook on medium/low for at least 20 minutes. If using the crock pot cook on low for 3-4 hours.
- season with salt and pepper. Serve topped with 2 tbs mozzarella.
