Light Smoked Sausage Skillet

  • Spray large skillet with cooking spray. Heat skillet over medium high heat.
  • Cut potatoes in half, then slice each half thinly. Place into preheated skillet. Remove from heat, spray again with cooking spray. Return to heat.
  • Cut onion in half, slice each half thinly. Separate onion, add to skillet. Remove from heat, spray with cooking spray. Return to heat.
  • Slice both peppers thinly, then add to skillet. Remove from heat, spray with cooking spray, return to heat.
  • Slice sausage on an angle thinly. Add to skillet. Remove from heat, spray with cooking spray, return to heat.
  • Cook until potatoes are browned and cooked through, and peppers are soft.

  1. I was looking for a recipe that included sausage, and I stumbled upon this great recipe. I also began with 2 tablespoons of olive oil instead of cooking spray, but added cooking spray like the recipe called for. I added extra seasoning and it was super delicious! Thanks for posting!
     
  2. I absolutely loved this dish as did my daughter. I followed the recipe in all ingredients but made a few minor additions. I began with 2 tsps of olive oil so that killed it being WW friendly but it was worth it for us. I did use cooking spray on the ingredients as I added them after the potatoes. I also added some salt, pepper and garlic powder. If I had thought about it I would have added minced garlic earlier but after I taste tested it during final cooking I realized it needed more flavor for our tastes and since we love garlic that was the way to go for us. I also covered it at the last to make the peppers a little less crunchy but that is simply our tastes. Thanks Amanda this recipe goes on my list for dishes cooked often and will be making it over and over.

<p>I live in TN with a husband, 9 year old, 6 year old, and our two dogs. I'm a busy mom who loves to cook for family and friends. We have two boys, and they are the light of my life! My husband is a restaurant manager. We actually met while working together at Bob Evans in another city. He was one cute grill cook!! Now he is one cute manager, and I am so proud of him! He currently works for El Chico, and he is very happy there. <br />I am a stay at home mom who sometimes does temp work, which is a big change from corporate America. We'll see how that goes. Now that I have some more time, I plan to get back to the kind of cooking I used to do. You know...with pots and pans instead of a take out menu. I love to crochet, garden and hike with the family.
