Lighter Reuben Sandwich

"This recipe is a mix between Emerils and Rachael Ray's with a bit of editing to make lighter...I use mustard, but you can always use Thousand Island dressing if you prefer...serve with baked french fries"

  • In a medium skillet combine sauerkraut, beer, and mustard. Bring to boil, then reduce heat to med. and simmer until liquid is absorbed, about 10 minutes.
  • Spray an indoor grill or waffle maker wth cooking spray.
  • Assemble sandwich. Lay out 4 slices of bread top each with mustard, sauerkraut, 2 slices corned beef, 2 slices ham, and 1 slice cheese. Top each sandwich with remaining slices of bread. spread 1 tsp butter on top and bottom of each sandwich. Cook on grill till lightly browned and cheese melts.
