  • spray a large pan with cooking spray and brown the sausage links over medium heat until they are mostly done.
  • remove sausage from the pot and set aside for later. When cool, slice diagonally. Drain any excess fat from the pan, if there is any. (Not usually any for me)
  • Saute onions and peppers over low-medium heat until they begin to soften. Add garlic and seasonings and saute 1-2 minutes more.
  • Add the sausage back to the pan and pour in the beer. Let the mixture simmer until the beer is reduced to about half.
  • Add the tomatoes and continue to simmer at least 10-15 minutes, or until the turkey sausage is cooked through.
  • serve over brown rice or in sandwiches.
