  1. Lightly beat whole eggs in a bowl.
  2. Add salt, melted duck fat and sparkling water to beaten whole eggs.
  3. Beat egg whites until soft peaks form.
  4. Measure matzoh meal and pour into large bowl.
  5. Add whole egg mixture to matzoh meal and stir until blended.
  6. Fold egg whites into matzoh meal mixture until all trace of white disappears.
  7. Cover bowl and place in refrigerator for 20 minutes.
  8. Bring four quarts of salted water to a boil.
  9. Form matzoh balls and drop gently into boiling water.
  10. Reduce heat to establish a gentle boil and boil matzoh balls for 35-40 minutes.
  11. Remove matzoh balls with slotted spoon and place in container if refrigerating overnight.
  12. Heat matzoh balls in microwave and place in soup bowel. Do not warm matzoh balls in soup pot as they may absorb too much soup.
  13. Enjoy.
