Lime Cilantro Ranch Dressing

"I use this wonderful dressing on wraps, salads, fried shrimp, and tacos. This recipe is from a Texas cookbook, to which I added lime juice and chopped cilnatro."

  1. Taking myrar's advice, I added 1T lime juice and increased the cilantro. I also decreased the jalapeno to 1/2 pepper and used low-fat mayo. It was wonderful!!!! I made it to go in burritos but also used it as a lettuce salad dressing with tomatoes, avocado, and mexican cheese in the salad. This is a keeper.
     
  2. Fantastic taste! Will definitely make this again. As suggested from someone else, I too added 1 Tablespoon of lime juice and extra cilantro and used light mayo. YUM!!!
     
  3. Very good. I used the Mexican mayonnaise with lime and did not add any lime. It was delicious. Yummy on tacos and salads with a some Cotija cheese.
     
  4. This dressing was quite good, but the recipe doesn't mention the lime in the ingredient list. I used 1 tablespoon of lime juice and added more cilantro. I refrigerated this for a day to meld the flavors and used it on taco salad.

For fun, I read mysteries and thrillers, watch old movies, and play with my birds, who otherwise would chew the condo down around my ears, if left to their own devices. Also, I am working on a Texas sauce/salsa/dressing cookbook I want to self-publish. I like to read cookbooks, but now mostly collect recipes off the net, especially virtualcities, epicurious, and now, recipezaar. The cookbook I have used recently the most is "American Classics." I love to create new recipes and kitchen test them on my hapless friends and relatives. Haven't lost anyone yet! Re: Food TV shows - I think Iron Chef is irritating, and Emeril is contrived. Would rather watch someone cook who isn't putting on a big performance.
