  1. Nice balance between the lime and the sweetness - and a very easy recipe. I also liked the pecans and coconut in the base. I've made a similar slice before with a plain shortbread crust but the texture and taste of the nuts was more interesting. I scaled up the recipe to 1.5 of this recipe for a tin 8" x 12" but I think I would double the recipe next time to get a slightly thicker slice. Thanks for posting.

  2. It was very good. Liked the nuts and coconut in the crust. I added a bit more lime juice and grated peel than in the recipe. I tasted the filling before baking, and tasted about right. Not that I would suggest everyone to do that since it is raw eggs. Overall, good recipe.

I am a busy single mom of 5 growing boys!! My children's ages are 21,18,14,12 and 10 1/2. In my spare time, when I have any, I try to walk 3 miles a day.I like to read Woman's World and inspirational books and if I didn't have 5 beautiful boys to care for, I would probably be doing missionary work. I live in the beautiful Okanagan Valley in British Columbia and I swear we must be living in Heaven on earth!!!I would love to travel if I had the resources and time with Brazil and South America being on the top of my list of places to see.
