  • Preheat the oven to 375 degrees F (190 degrees C).
  • Combine the flour, salt and paprika in a large plastic bag. Sprinkle lime juice over the chicken thighs, then place them in the bag. Shake pieces around until completely coated
  • Heat the oil in a large skillet over medium-high heat.
  • Add chicken and cook just until browned on each side.
  • Transfer to a baking dish. Mix together the brown sugar and lime zest; sprinkle over the chicken.
  • Pour the chicken broth and white wine into the pan. Sprinkle mint over the top
  • Bake uncovered for 45 minutes in the preheated oven.
  • Chicken should be cooked through and juices will run clear.

  1. Wow! This is great chicken! I used boneless skinless breasts (3), otherwise made just as directed and would not change a thing. Smells great while cooking, lovely flavor, and so moist and tender. This is a keeper - thanks for sharing the recipe!
     
  2. Loved this chicken. The lime was very subtle and the chicken moist and tender. I used chicken breast pieces- just allowed them to cook slightly longer in the pan before placing in the baking dish. Used fresh mint and lime for a great blend of flavours. Photo also being posted. Made for January 2013 Recipe Swap in the Aus/NZ Forum.
     
  3. This goes into my best of the best file! Delicious!!! It's so easy, too. The lime balances the brown sugar perfectly. I omitted the mint (personal preference) and used bnl sknl chicken breasts instead of thighs. The chicken broth and wine give the chicken some subtle flavors while helping to keep the chicken juicy. This is absolutely fabulous and I will be making it often. Made for the Football Pool in the Cooking Tag Games forum.

  5. This is just fabulous! I didn't use the mint (personal preference), but otherwise made as posted. Such an easy dish to make and such great flavors! Loved the brown sugar and lime zest...very unique flavor and one that will be repeated.

I am also&nbsp;married to my best friend, Jeff and have been since April 2005.&nbsp; I love cooking, hate cleaning and will do whatever I can to get out of it!&nbsp;&nbsp;I&nbsp;love grilling and baking.&nbsp;&nbsp;I do most of the grilling at my house, and bake for almost a week straight at Christmas time!&nbsp; I can make or will attempt just about anything,&nbsp;though I rarely make&nbsp;brownies, my husband's are the best!&nbsp; Homemade breads are not my friend, so I am always working on bread baking.</strong></span></p> <p><span><strong>As for recipe ideas (besides zaar) Cooking Light Cookbooks are my favorites.&nbsp; I love to make new meals and try new things; it is hard though because my husband is picky when it comes to veggies (and hates seafood); If it were up to him we would have baked-bread crumb chicken and white rice at least one meal a day!&nbsp; Over the past couple years with zaar, I have found tons of new recipes&nbsp;my family&nbsp;normally wouldn&rsquo;t eat&nbsp;but have been happily surprised with new favorites.</strong></span></p> <p><span><strong>I&nbsp;love to join in&nbsp;all of the tag games; I haven't been as present as I would like, but as soon as my Jeff is back from working in Ohio I will be back in full tagging mode! </strong></span></p> <p><span><strong>Cooking is my hobby and passion, I always like to host the family get togethers and volunteer for the potluck dishes.&nbsp; Most of all though&nbsp;are my kids; being home all day with them is fun and challenging, but I wouldn&rsquo;t trade it for any salary!!</strong></span></p>
