  • 14 cup lemon curd
  • 2 12 tablespoons limoncello
  • 2 cups low-fat vanilla ice cream
  • 4 vanilla meringue cookies, crushed (about 1/2 cup)

directions

  • Combine curd and liqueur in a small bowl, stirring with a whisk to blend.
  • Add ice cream to curd mixture; stir to blend.
  • Spoon 1/2 cup ice cream mixture into each of 4 bowls; top each with 1 crushed meringue cookie.

  1. Scrumptious! I was concerned the lemon might be too lollipop, but it was a lovely and delicate and the limoncello came through but wasn't too boozy. I made coconut pecan shortbread cookies and crumbled them on top and I made the limoncello. The cookies were perfect with it, a little crunch is always a good thing!. I used full fat vanilla ice cream and made a smaller serving . Made for SWT2018 A Sweet Taste of Argentina challenge by one of the Pantry Pirates
     
  2. Loved this simple little dessert! I had half a jar of lemon curd languishing in the back of the fridge, just begging to be used. This was just the ticket! Not too sweet, not at all complicated, and just the right dessert for this sweltering Florida summer! I made this yesterday, and had the leftovers this afternoon. I think it was better today - or maybe Saturdays make everything better... Made for SWT 2018, Team Incredibles.
     
  3. Yummy ice cream treat!!! I made this for 1/4 of the recipe, one serving. I initially chose this recipe as I had some Vanilla Wafers that needed to be used. After returning home from picking up DD from college, they were gone. So I made recipe#309425, #309425 for the cookie crumbs and then topped it with a whole cookie, yum!!! This isn't a tart lemon flavor, just very refreshing and light!!! Thanks so much for sharing the recipe. Made for PRMR Tag Game.
