“I make things really, really simple in the summer months. I mean....who wants to cook in all that heat (and I have AC!!) This is a very simple salad....not heavy in the dressing department, but with a nice clean lemony taste. I serve this with a grilled meat or fish and fresh fruit for dessert. Freshly cooked tuna, prawns or cooked chicken can be added for a more substantial meal”

Directions

  1. In a pot of boiling water, cook pasta. Drain and rinse under cold water. Drain; place in a large bowl.
  2. While pasta is cooking. Chop up the cucumber, feta cheese, red onion, olives and cherry tomatoes. Add the pepper.
  3. Dressing: In a small jar with lid, combine lemon juice, olive oil, garlic, oregano, salt and pepper. Shake well to incorporate.
  4. Add to salad and combine. Chill for 2 hours.
