Lively Lentils

"Lentils are such a good-for-you food, and served over brown rice, make a complete meal. This recipe is a combination of several, and has a wonderful sweet and spicy flavor. Add water if they become too thick. Leftovers can be frozen."

  • Bring lentils to a boil in the water and simmer 25 minutes.
  • In a skillet, saute onion and green pepper in oil until soft.
  • Add to lentils, along with all other ingredients.
  • Simmer an additional 20 minutes until lentils are cooked, but not mushy.

  1. This is a good, flavorful lentil recipe. I used 1 lb of lentils which was 2 cups because I didn't want to have 1/2 cup left. I added a bit more spice and 5 cups of water because of this. I also didn't have tomato paste so I used crushed tomatoes. Thanks.
