Lll Baking Mix Coffee Cake

- 2 cups la leche league baking mix (recipe available at Recipe Zaar)
- 1⁄4 cup brown sugar or 1/4 cup honey
- 1 egg
- 2⁄3 cup milk or 2/3 cup water
- 2 -3 tablespoons melted butter or 2 -3 tablespoons oil
- 1⁄4 - 1⁄2 cup chopped nuts (optional)

Topping
- 2 tablespoons brown sugar
- 1⁄4 cup la leche league baking mix
- 1 teaspoon cinnamon
- 1 tablespoon butter
directions
- Beat sugar, egg, milk and butter.
- Stir into Mix just until moistened and fold in nuts.
- Spread batter into greased 9" round or 8" square.
- Mix toppings until crumbly and sprinkle over batter.
- Bake at 400 for 20-25 minutes.

<p>Childhood Cancer Awareness Advocate and mom to sassy, smart 18 y/o DD and courageous, artsy 16 y/o DD who is a survivor of cancer and heart failure [caused by the chemo] and wife to steadfast, goofy husband. We are from Thunder Bay but at the moment are medically displaced in Toronto as my daughter needs to stick close to Sick Kids Hospital until she gets a new heart. After 18 months living at Ronald McDonald House we moved into a tiny, 2 bedroom apartment in the Village thanks to Maggie Q who is paying our rent! Life is tough but we will do whatever it takes to give our daughter a fighting chance at a long, normal life.</p>
