- 2 1⁄2 lbs potatoes
- 3 1⁄2 cups skim milk, divided
- 4 ounces light cream cheese, softened
- 2 tablespoons butter
- 3 green onions with tops, sliced
- 4 ounces cheddar cheese, grated
- 1 teaspoon salt
- 1⁄2 teaspoon pepper

directions
- Slice potatoes and pour 1/2 cup milk over them in a microwaveable container. Microwave covered on high for 11 minutes. Stir potatoes, cover and microwave for 10 minutes. Coarsely mash the potatoes.
- While potatoes are cooking , beat together cream cheese and remaining milk until smooth. Add cream cheese and butter to potatoes and microwave on high for 4 minutes or until hot.
- Stir in any optional add -ins and salt and pepper. Top with onion and cheese.
