  • Heat oven to 350°.
  • Mix first six ingredients in mixer on medium speed until smooth and creamy.
  • Spoon into a greased 9x13-inch pan or casserole dish and sprinkle with cheese and bacon.
  • Cover with foil and bake for 30 minutes.

  4. These potatoes were moist and creamy, even thought I prepared them a day before baking and serving. I followed the directions as written and wouldn't change a thing.
     
  5. These were outstanding. I used boxed mashed potatoes and prepared in microwave. Didn't even dirty the mixer, just stirred it all in the bowl I made the potatoes in. Made ahead so baked a little longer to heat through. Thanks for posting a keeper.

Tweaks

  1. I used to make stuffed potatoes with a very similar filling. These are so much easier-no need to bake and scrape out, or mash. I also mixed some of the cheddar cheese into the mixture, used cream cheese with chives, and sprinkled some paprika on the top. Thanks for reminding me about this yummy dish, and for making it so much easier.
