- hollandaise sauce (or use any of the prepackaged ones)
- 6 -8 slices toast
- 6 -8 slices bacon
- left over turkey
- 6 slices swiss cheese
directions
- Grease large casserole dish.
- Prepare Hollandise sauce.
- Fry bacon slices.
- Layer toast in bottom of casserole.
- Place left over turkey on top of toast.
- Place swiss cheese slices over turkey.
- Crumble bacon over cheese.
- Pour hollandise sauce over top.
- Place in 325 degree for 25-30 minutes.

This is a great recipe, a restaurant I worked at used this except the filling was shrimp, crabmeat green onion and tomato with the cheese more of a meat salad type filling. A very big seller at our lunch service and my favorite payday lunch. This is very good the only thing missing is maybe an egg. Thank you for the remembrance

I had a few problems with this recipe unfortunately. First, I'm not sure how much hollandaise sauce should have been used, my recipe made a cup and it definitely wasn't enough. The hollandaise broke down under the heat and the grease between the sauce and the bacon changed the texture of the bread so it was 'gritty' - the best word I can think of to describe it. I think I would have enjoyed the recipe more using left over gravy instead of hollandaise -I really liked the combination of cheese, bacon and turkey. As well it was easy to put together, once the hollandaise was made. I'm curious as to how much hollandaise you used in the recipe, a listed amount would be helpful, as I'm thinking maybe that would have made a difference as well.
