  1. Toast peppers in a dry iron skillet. Seed.
  2. Place in a saucepan. Cover with water. Bring to a boil. Remove from heat. Let stand 1 hour.
  3. Drain.
  4. Place in a food processor with the garlic, oregano,sugar and salt.
  5. Puree until smooth.
  6. Heat oven 450.
  7. Combine the semolina, cornmeal, flour, pepper and chili powder.
  8. Dredge chicken in chili mix then dry mix to coat.
  9. Plce on a sprayed baking sheet.
  10. Bake 15-20 minutes.
