“the grand children always want my mother in law to make this salad when they visit. It is an update on an OLD recipe that calls for a cooked dressing --she has gone modern and uses the microwave and add cool whip instead of making her own whipped cream.She makes about a triple batch in a big tupperware bowl and keeps the leftovers in the fridge -- be sure to stir leftovers and eat with in about a day. Spaghetti rings are a little hard to find where I shop, You could probably substitute something like alphabet shapes or even fine spaghetti cut in tiny pieces but the rings are the best.”

Directions

  1. Mix cooked spaghetti rings, apples and pineapple together in a big bowl, set aside.
  2. Mix lemon juice, powdered sugar, and eggs in a microwave safe bowl
  3. cook on high for 5 minutes --- stirring every minute.
  4. cool the dressing about 15 minutes, pour over fruit and pasta and chill 24 hours.
  5. just before serving mix in cool whip and marshmallows and cherries.
