Lotsa Apples Apple Cake

"Yes, I know there's a glut of apple cake recipes here already. I want mine. Mine has what I think most apple cakes lack - a TON of apples. I use 5 large apples, even if it's a bit more than 4 cups. There's a trick to getting the cake just chock-full of apples. Here it is."

  • Preheat the oven to 350°F Oil a 9"x13" pan and set it aside.
  • In a large bowl, mix the flour, baking powder, baking soda, cinnamon and salt.
  • Push the flour mixture to one side of the bowl.
  • Measure the sugar into the other side of the bowl, and break the eggs over it.
  • Pour over the oil, and beat the eggs and oil into the sugar, then mix in the flour.
  • The dough will be quite stiff.
  • Peel the apples, or not, as you prefer.
  • Chop the apples, and mix in two thirds of them.
  • There will seem to be far too many apples, but get them mixed in as best you can.
  • Spread the batter evenly in the pan.
  • Spread the remaining apples evenly over the top.
  • Press them down until the batter pushes up around them.
  • Bake at 350°F for 45 minutes or until done.

  2. This was very good, but I don't know if I'll make it again as it does have a lot of sugar. I did sprinkle 1 Tbsp. of cinnamon sugar on the top, and I think that really helped. I served them to some friends who are all trying to lose weight. Everyone was reluctant to try one as they were kind of crumbly. They all ate one and said they were very good for being so healthy, but no one wanted to take any home. I used 4 heaping cups of diced Granny Smith apples.
     
  3. This cake was tasty, but the apples on top that didn't fit into the batter got kind of dried out and rubbery. I did push them down into the batter, but there just wasn't enough to cover. I had 5 apples, but it made about 7 cups chopped and there was no way they'd all fit, so I probably put in 4 1/2- 5 cups.
     
  4. Five stars do not do this cake justice. THE BEST apple cake I ever ate!! All the apples really make the cake moist and sooooo good. You didn't specify what kind of oil, so I used Flax/Borage (I figure might as well be as healthy as possible, right?) and extra cinnamon. Also used the sucant. Smelled so good baking I had to try a piece while warm, and it surly didn't dissapoint. Thanks for another wonderful recipe, Jenny.
